Ingredients:
● 160g Doña Elena Al Dente Fettuccine Pasta
● 160g Doña Elena Pure Olive Oil
● 14g garlic (finely chopped)
● 24g shallots (thinly sliced)
● 1pc bay leaf
● 8g sesame seeds
● 4g ginger (finely grated)
For the Chili Oil:
● 6g red pepper flakes
● 1g (pinch) paprika
● 1g (pinch) cayenne pepper powder
● 25g green onions (chopped)
● 1g salt
● 10g tamari
● 10g cilantro leaves (garnish)
● 2g sesame seeds (garnish)
Instructions:
- Making of dry spice mixture
For the chilli oil:
● In a medium glass bowl, add the red pepper flakes, paprika, cayenne pepper, green onions and set aside.
- Making of chilli mixture
● In a medium pot, combine Doña Elena Pure Olive Oil, garlic, shallots, and bay leaf. Cook over low-medium heat until the garlic turns light brown and crisps about 4-6 mins.
● Turn off heat, then stir in sesame seeds and ginger in hot oil for 1 minute.
- Creating chilli oil
● In the medium glass bowl, where the dry spice mix is, pour the hot oil to create the chilli oil, season with salt to taste, and set aside the chilli oil to cool
- Cooking the pasta
● In a large pot, add 1500ml of water with a pinch of salt and bring to a boil.
● Cook the Doña Elena Al Dente Fettuccine Pasta according to the package directions of 11mins, using a timer.
- Mixing of chilli oil to pasta and plating
● Once pasta is cooked, drain and save 60ml of pasta water.
● In a separate bowl, toss the hot pasta, tamari, and chilli oil until combined or spoon over chilli oil and tamari over cooked pasta.
● Plate and top with cilantro leaves and sesame seeds for garnish.
