How To Prepare Soy Sauce Chow Mein ?

Preparation:   

Preparation time: 5 mins

Cooking time: 10 mins

Serving: 4

Ingredients:

  • 1 lb fresh chow mein noodles I used steamed egg noodles
  • 8 stalks green onions cut into 2" pieces
  • 6 oz bean sprouts
  • 1/2 yellow onion sliced
  • 4 tbsp neutral oil for frying; I used avocado oil

  Sauce

  • 2 tbsp light soy sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp sugar
  • 1/4 tsp msg optional
  • 1 tbsp water

Instructions:

  1. Mix together your sauce by combining light soy sauce, dark soy sauce, oyster sauce, sugar, msg, and water.
  2. Slice your green onions into 2" pieces and prepare your onions and bean sprouts. Separate your green onion whites and onions in a separate bowl from your scallion greens and bean sprouts.
  3. Boil your fresh chow mein noodles for 1 minute or to package directions, then drain and rinse off excess starch. Pat dry any excess moisture from the noodles.
  4. Add 2 tbsp of oil to your wok or pan, and saute your green onion whites and onions for 1 minute over high heat.
  5. Add your chow mein noodles and work quickly to separate the noodles and combine with the onions. Add 2 additional tbsp of oil to properly coat the noodles if your pan is too dry. Cook for 2-3 minutes until your noodles are beginning to crisp up.
  6. Add your premixed sauce and stir vigorously to combine. Continue cooking for 3-4 minutes until the sauce has fully absorbed into the noodles. Toss in the scallion greens and bean sprouts and stir fry for another minute. Plate and enjoy!
