How to prepare Grilled Aubergine Rolls ?

Preparation:       

Preparation time: 5 mins 

Cooking time: 10 mins 

Serving: 2

Ingredients:

  • 1 medium aubergine (eggplant)
  • 1 pinch of sea salt
  • 67ml (4 1/2 tbsp) olive oil
  •  Slice a boll of mozzarella cheese
  • fresh basil leaves

Instructions:

  1. Slice an aubergine (eggplant) lengthwise and rub with olive oil and sea salt.
  2. Grill the aubergine slices for a few minutes on each side.
  3. Slice a boll of mozzarella cheese and put a piece of mozzarella on the end of each aubergine slice.
  4. Put one or two fresh basil leaves on it as well. Roll the aubergine slices (starting at the mozzarella end) and use a toothpick to keep them in place.
