How To Prepare Grilled Flatbread With Burrata Cheese ?

Preparation:

Serving: 6

Ingredients:

  Tomato Skewers

  • 1 8 oz cherry tomatoes
  • Olive oil
  • Kosher salt
  • Freshly ground pepper
  • 4 skewers used for grilling

  Flatbread

  • 1 lb fresh pizza dough
  • Flour for dusting
  • 3/4 cup olive oil
  • 8 oz burrata cheese, drained in a colander
  • 8 oz parmesan cheese, grated
  • 2 tbsp fresh basil, chopped

Instructions:

  1. Divide the tomatoes evenly and pierce them with the skewers. Pour a small amount of olive oil over each skewer, sprinkle with salt and pepper.
  2. Turn grill on. Over low heat, lay tomato Skewers in the center of the grill. Grill for 5-10 minutes rotating ½ way through.
  3. While tomatoes are on the grill prepare flatbread dough. Start by cutting the pound of dough in 4 equal parts. Using flour, roll each portion of dough into ¼ inch thickness. Using a pastry brush, coat one side of the dough with a generous amount of olive oil.
  4. Take tomatoes off grill and place dough oil side down on grill. Carefully coat the other side of dough with oil. When large bubbles start forming on top side of dough, flip dough using a metal spatula. After flipping dough, sprinkle parmesan cheese evenly over all four flatbreads. Carefully take burrata cheese out of the colander, and pull small pieces off, placing them evenly over the four grilled flatbreads. Cover the grill lid for a few mins to let the cheese melt a little.
  5. Take flatbread off the grill and sprinkle with basil. Serve with tomato skewers.
