How To Prepare Broiled Salmon Over Corn Salsa ?

Preparation:

Preparation time: 10 mins 

Cooking time: 20 mins 

Serving: 5

Ingredients:

  • 2 lbs salmon fillets
  • 1 tsp basil dried
  • 1 tbs olive oil
  • 1/2 red onion
  • 1 green pepper
  • 2 cups frozen corn
  • 1/4 cup fresh parsley optional

Instructions:

  1. Preheat broiler and spray broiler pan with cooking spray. Place salmon on pan and sprinkle with basil. Season with salt & pepper to taste. Broil fish for 10 to 15 mins, or until desired doneness. Total time will depend on thickness of fish. While fish is cooking, prepare corn salsa. In large skillet, heat oil on med heat. Add onion and cook for 2 mins, stirring frequently. Add pepper and cook for few mins more. Stir in corn and cook for 5 to 6 mins until corn is soft. Remove from heat and stir in parsley if using. To serve: place corn salsa on plate and top with piece of salmon.
