The double sided Teppanyaki Plate is great for cooking meat, fish and vegetables on. One side of the plate is flat and the other side has a griddle surface, making it suitable for any type of food. The solid alloy plate holds the heat of the BBQ and provides a hot and even cooking temperature.
Grilled Salmon with lemon and tarragon
Serves 4 persons
Grilling time 15 Minutes

Ingredients:
4 fresh lemons
4 x 200gr salmon fillets, including skin
Freshly ground black pepper and red peppercorns
Salt
2 tbsp. high-quality olive oil
2 tbsp. butter
8 little bunches of tarragon
Preparation using the Lotus BBQ Grill teppanyaki plate:
*Rinse the lemons thoroughly and squeeze 2 and cut the others into thin slices
*Rinse the salmon and dab dry with a kitchen roll, season with black pepper and salt and sprinkle the fillets with the fresh lemon juice
*Heat 1 tbsp. or olive oil and 1 tbsp. of butter together, then use a brush to spread the liquid over the pan
*Place the salmon in the sizzling hot pan and sear on both sides over a medium heat for a few minutes only.
*Rinse the tarragon and dry
Now is the time to get your Lotus BBQ Grill started. After 3 minutes put the Teppanyaki Plate on your Lotus BBQ Grill grid (smooth side up). To begin, heat it moderately and brush with a little fat. Lay out half of the lemon slices on the Teppanyaki Plate, divided equally into 4 portions. Place 1 sprig of tarragon on each set of slices, then lay the salmon fillets on top. Finally cover the fillets with the coarsely chopped tarragon and lemon, pour the remaining oil and butter over them and season with ground red peppercorns to taste.
Cover with the Lotus BBQ Grill grill hood or with aluminium foil (if you don´t have the hood) and barbeque at a medium to high temperature until they are as brown as you like them. Don´t forget to turn the fillets a few times.
TIPP: The Lotus BBQ Grill Teppanyaki Plate is an especially low-fat way to barbeque. The fat is held back: It does not drip through the grid into the inner bowl as you grill the food. The food is cooked on the plate via the contact heat alone, preserving the full flavour or sensitive foodstuffs, such as fish and stopping them from falling apart. In accordance with the Japanese barbequing tradition, the smooth side of the plate is used. When you turn the food several times, it absorbs the spices and the marinade especially well, giving the final dish an amazing aroma.
