Lotus BBQ Grill, warm nights and the Spanish clay pot.

We have just come back from a visit to our favourite island on the Med, Mallorca.  What a great holiday.  Clear waters, sunny skies, tasty wines and delicious meals.  Added to our enjoyment we also have a Lotus Grill BBQ.  We were just surprised as you are that we could buy our beloved Lotus BBQ Grill on Mallorca.  As soon as we saw it in the shop we immediately bought it as it would be perfect to enjoy on a roof terrace, balcony or boat.

On this particular night we had invited friends over for a BBQ and we were going to introduce them to the Lotus BBQ Grill.  We also decided that we wanted to create something Spanish. 

We purchased a typical clay pot that is used in Spain and the Balearics and we threw the following ingredients into thepot:

  • Egg plant
  • Zucchini
  • Mushrooms
  • Red or yellow peppers
  • Garlic
  • Onions
  • Potatoes
  • Tomatoes
  • Various herbs: rosemary, thyme, salt and pepper, chilli

In fact, you can add any leftover vegetable that you might have in your fridge. 

We got our Lotus Grill BBQ working, which incidentally only takes 3 minutes before you can start barbecuing.   We placed the covered clay pot on the grid of our Lotus BBQ Grill and left it for 45 minutes.  After 45 minutes the vegetables were perfectly cooked and the pot could be put (as is) on the table for our guests to tuck in.  What an easy and delicious side dish to have with your meat and you will also have the non-meat eaters covered – so all will be happy.

Try it with your Lotus BBQ Grill as it was simply delicious.
