Sunday Junk, chicken drumsticks, Lotus Grill and the Grill Pan

Again we had a great weekend with super weather but no rugby and because of this we could take the opportunity to go out on a junk.  However, this time we decided to take along our Lotus Grill which is easy to transport due to the convenient carry bag and have a BBQ on board our junk.  As it was a bring and BBQ I decided to BBQ chicken drumsticks and I thought it would be the perfect opportunity to introduce our new Grill Pan.

The benefits of using the grill pan is that the meat doesn’t stick to the pan, it keeps your grid much cleaner and it is easy to remove from the heat if the BBQ becomes too hot.  So, there are enough reasons to use a Grill Pan.

What you will need :

A LotusGrill regular  

A Classic GPF Grill Pan with lid  (more information under accessories )

LotusGrill smokeless charcoal and gel

INGREDIENTS for 4 people:

½ cup soya sauce

1/2 c. balsamic vinegar

3 tbsp honey

2 cloves garlic, minced

2 green onions, thinly sliced

2 1/2 lb. chicken drumsticks

2 tbsp.  sesame seeds, for garnish

DIRECTIONS

    In a large bowl, whisk together soy sauce, balsamic vinegar, honey, garlic, and green onions. Set aside 1/4 cup marinade. 
    Add chicken to a large resealable plastic bag and pour in remaining marinade. Let marinate in the fridge at least 2 hours or up to overnight. 
    Ignite your LotusGrill (takes about 4 minutes)
    Put your grill pan on the grid
    Place your marinated chicken drumsticks on the grill pan
    Continue to based while they are cooking, turning every 3 to 4 minutes
    BBQ until charred and cooked through, 24 to 30 minutes in total
    Garnish with sesame seeds.

Now you can serve with a fresh green salad and an ice-cold glass of wine.
