Crispy oven fried Zucchini is made with bread crumbs and parmesan cheese and baked in the oven. So crispy and delicious without the extra added calories and just a perfect fit for your next LotusGrill barbeque

*2 medium size zucchini
*1/4 cup grated parmesan cheese
*1/2 cup bread crumbs
*2 large eggs, beaten
*Salt and pepper, to taste
- Preheat the oven to 200 degrees. Trim the ends off the zucchini and slice each into ¼ to ½ inch coins. Spray a baking sheet with cooking spray or line with baking paper.
- Combine the bread crumbs, parmesan cheese and Italian seasoning then mix thoroughly. Dip the zucchini coins into the beaten egg and then the crumb mixture, making sure to coat evenly.
- Place on the baking sheet. Spray the tops lightly with cooking spray. Bake for 25-30 minutes or until browned. Turn on the grill for the last 2 minutes if you would like them extra crispy.
- Season with salt and pepper to taste and service with a chilli sauce or a sauce of your own choice
